I love Rice fritters, but I cannot eat milk and dairy products so, how can I do? The answer is easy: these rice fritters recipe is Gluten and Lactose free...
Here is my recipe for wonderful rice fritters
Ingredients:
1 liter of rice milk
100 gr sugar
25 gr margarine
1 orange grated zest
300 gr rice
2 eggs
2 teaspoons rum or cointreau
80 g maize starch
1/2 teaspoon baking powder
Put the rice milk on fire, add sugar and bring to a boil; when hot add the grated zest of orange (be sure it to be organic and untreated) margarine and rice. Cook on low heat until all the liquid is drainded stirring occasionally, then turn off and let cool. When the rice is cold whip the whites until stiff, then add the red to the cooked rice, one at a time, two teaspoons of rum, the 'starch, the baking powder and finally the whites stiffed. Mix gently. Take with a teaspoon a small portion of the dough and let it cook until it is golden in hot oil on medium heat (around 170 °) Drain them on a paper towel. They are really good,but are even better if filled with custard: you will find the recipe for gluten and lactose free custard
