Molto spesso una buona pasta fa la differenza tra un ottimo primo piatto e un piatto mediocre. Queste ricciarelle alle code di gambero, sono state realizzate con un tipo di pasta molto particolare, fatta con grani antichi e perfetta per ogni tipo di condimento, in questo caso mare e limoncello, in un altro caso con una salsa di funghi secchi, molto veloce, ma altrettanto buona, che pubblicherò nei prossimi giorni. In entrambi i casi la pasta è il viatico per il successo in tavola. Vediamo come sono preparate queste ricciarelle alle code di gambero.

Ingredienti per 3 persone:

250 gr ricciarelle o pasta equivalente
500 gr gamberi freschi
250 gr piselli
la scorza di 1/2 limone
un cucchiaio di limoncello
sale
olio extravergine d'oliva

La preparazione di questa pasta è molto veloce e si possono utilizzare sia prodotti freschi, che congelati. Mettere al fuoco una abbondante pentola d'acqua salata. Intanto pulire i gamberi, se volete usare solo le code privateli della testa. Mettete al fuoco una larga padella con due o tre cucchiai di olio extravergine, unire i piselli e farli cuocere a fuoco vivace per circa 5 minuti, aggiungere i gamberi puliti e coprire ( se necessario aggiungere un pò d'acqua). Lasciar cuocere ancora 5 minuti, poi aggiungere la scorza del limone grattugiata e il limoncello, coprire e spegnere il fuoco. Quando l'acqua inizia a bollire buttare la pasta e lasciar cuocere il tempo indicato dal produttore. A pochi minuti dalla fine della cottura, scolatela in modo che un pò d'acqua rimanga tra la pasta e unitela alle code di gambero. Fate saltare su fuoco basso per due o tre minuti e servire.

Ingredients for 3 people:

250 gr pasta ricciarelle or similar
500 g fresh shrimp
250 gr peas
zest of 1/2 lemon
a tablespoon of limoncello
salt
extra virgin olive oil

The preparation of this pasta is very fast and you can use either fresh, and frozen ingredients. Place a generous pot of salted water on fire. Meanwhile, clean the shrimp, if you want to use only the tails cut the heads. Put a large pan on the fire with two or three tablespoons of olive oil, add the peas and cook over high heat for about 5 minutes, add the prawns and cover ( if necessary add a little water). Allow to cook for another 5 minutes, then add the grated lemon zest and limoncello, cover and turn off the heat . When the water begins to boil, add the pasta and cook for the time specified by the manufacturer . A few minutes before the end of cooking, drain it so that some water remains between the pasta and join it to the prawns. Sautè over low heat for two or three minutes and serve.
