Tiramisù eretico, ricetta senza latticini

Spesso chi non può mangiare latticini, per allergia o intolleranza grave, sente la necessità di ricreare i gusti che ha assaggiato nel passato e a cui adesso deve rinunciare. Penso che uno dei dolci più amati e rimpianti sia il tiramisù, che sebbene non sia proibito a chi ha un'intolleranza lieve, visto che il mascarpone ha pochissimo lattosio, è decisamente da evitare per coloro che hanno un deficit grave di lattasi. A loro dedico questo Tiramisù eretico, perfetto per chi non mangia latticini, buono per tutti.

Tiramisù eretico

Per preparare un tiramisù eretico serve una buona panna vegetale ( astenersi puristi della panna e dei latticini, questo post non è dedicato a loro ;-) ) Io mi trovo bene con un paio di marche, ma sono convinta che ne troverete di ottime nei negozi di prodotti bio e vegan. Vediamo come procedere:

Ingredienti:

Pavesini
500 ml di panna vegetale
4 tuorli d'uovo
100 gr zucchero
due tazze di caffè zuccherato
cacao in polvere
Cioccolato fondente in scaglie

Montate la panna vegetale. Montate le uova con lo zucchero fino a che saranno gonfie e spumose. Se non volete usare le uova crude, potete pastorizzarle procedendo così: Mettete al fuoco lo zucchero con due cucchiai d’acqua e portate a bollire. Intanto mettete i tuorli in una ciotola e iniziate a montarle. Se avete un termometro, controllate che lo sciroppo raggiunga la temperatura di 121°, quindi versatelo a filo sulle uova che stanno montando e continuate a montare fino a che saranno di nuovo fredde. Se non possedete il termometro, saprete che lo sciroppo avrà raggiunto la temperatura quando farà le bolle. Quando le uova saranno bianche, spumose e fredde,aggiungere la panna montata e mescolare bene.
Mettete due o tre cucchiai di crema sul fondo di una pirofila, quindi bagnare i pavesini nel caffè zuccherato e fare uno strato doppio, aggiungere, se vi piacciono, le scaglie di cioccolato fondente e coprire con il resto della crema. Spolverare con cacao in polvere e conservare in frigo.

Ingredients:

Pavesini
500 ml vegetable cream
4 egg yolks
100 g sugar
two cups of sweetened coffee
cocoa powder
Dark chocolate flakes

Whip the vegetable cream. Whip the eggs with the sugar until they are swollen and foamy. If you do not want to use raw eggs, you can pasteurize them this way: put on fire sugar with two tablespoons of water and bring to boil. Meanwhile, put the egg yolks in a bowl and start to whip. If you have a thermometer, check the temperature of the syrup reaches 121 degrees, then pour slowly in the eggs that are mounting and continue beating until they are cold again. If you do not have a thermometer, you'll know that the syrup has reached the right temperature when bubbles. When the eggs are white, foamy and cold add the whipped cream and mix well.
Put two or three tablespoons of cream on the bottom of a baking dish, then dip Pavesini bisquits in the sweetened coffee and do a double layer, add, if you like, the dark chocolate flakes and cover with the rest of the cream. Sprinkle with cocoa powder and refrigerate.
